I loved reading this post of yours - it was full of hope and optimism.

The dish also looks fabulous - as most Moroccan food is!

Emily Rose, this subject is a great idea for a post! Especially during NaBloPoMo when I'm sure I will be without a recipe or photo many times! The short answer is that I am indeed raising the boys vegetarian and haven't found it at all hard. I feed them what I eat for the most part and I don't worry too much! :)

I'm so glad you posted this! This last Thursday I was talking to my dad about finding a good baba ghanouj recipe. I love baba ghanouj with the same intensity as you do!! The really funny thing is that I fed it to my 8 month old daughter the other day and she also adored it- she loves hummus too (I haven't given her meat yet because I don't eat it and I don't really want to cook it). Do your boys eat meat? How hard is it to raise vegetarian children? I feel like it won't be bad since I haven't had meat in 12 or 13 years I fell up to the challenge to creating healthy vegetarian protein rich meals for my family too. Sorry that I'm rambling- but eggplant tends to do that to me!
