		<description>One of my favorite summer salads is an Edamame salad that I keep in the fridge as a base and will add various things to single serving sizes as the week goes on; tuna, left over chicken, sliced turkey. I&#039;m SURE you have made something like this but it&#039;s just so yummy I wanted to add to your salad post. And no vinegar!!!! :o). &lt;br/&gt;&lt;br/&gt;Love you! Lo&lt;br/&gt;&lt;br/&gt;PS - I find that I have to put alot of &quot;Jane&#039;s Crazy Salt&quot; in it to punch up the taste. Maybe you can help me figure out a way to use less sodium??? Of course you can use fresh corn, too.&lt;br/&gt;&lt;br/&gt;Ingredients&lt;br/&gt;1 lb frozen shelled edamame &lt;br/&gt;3 cups frozen petite corn kernels &lt;br/&gt;1 chopped red bell pepper &lt;br/&gt;3/4 cup sliced green onion &lt;br/&gt;1/2 cup finely chopped red onion &lt;br/&gt;1/4 cup chopped fresh Italian parsley &lt;br/&gt;2 tablespoons chopped fresh oregano or marjoram or basil &lt;br/&gt;Dressing&lt;br/&gt;1/3 cup fresh lemon juice &lt;br/&gt;2 tablespoons Dijon mustard &lt;br/&gt;2 tablespoons olive oil &lt;br/&gt;3/4 teaspoon salt &lt;br/&gt;3/4 teaspoon fresh ground black pepper</description>

First of all, I too crave salad and would be quite happy having only salad for dinner but alas my husband requires some side and main dishes!  &lt;br/&gt;&lt;br/&gt;I used the same green goddess recipe a few weeks ago for my book club dinner. It was one of those ninety degree days in Seattle (rare but appreciated) and I was determined to do an entire menu that did not require turning on my stove. Luckily, when you are cooking for a group of women you can get away with a light dinner menu. I decided to make Gazpacho, using the recipe from your blog &lt;br/&gt;(what a simple and delicious recipe)and paired it with the Green Goddess salad.  I love avocados in anything but especially in salad and the creamy herb dressing was delicious and looked beautiful.  The whole dinner was yummy and perfect outside with many glasses of chilled wine.  Thank you for the inspiration.  &lt;br/&gt;&lt;br/&gt;Joy</description>
